Can the para-EQ be easily modded to provide a phase reverse?
It looks like adding a switch that bypasses IC1b may do this -- but I'm still learning this stuff and am not sure if that is a good idea.

IC1 provides the high impedance input buffer. So you don't want to bypass that. A better solution would be to add a second inverting buffer with a gain of 1. Add a switch so that it puts the buffer in series just before the non-inverting output buffer or bypasses it.
