I bought some metal and plastic led mounts to make the build a little more professional looking and because I have a hard time getting the leds to come through the hole in the casing. Can I just add wire to the legs of the led and solder the wire to the board instead of the led legs?

absolutely. might want to shrink wrap each lead to keep things clean. make sure your anode and cathode are going to the correct spots.

I've done this exact thing. Especially when wanting to change the led color. Just be careful about which lead on the led is +/- as stated above. And definitely shrink wrap everything. That keeps you from shorting your signal against the enclosure or somewhere else.
